Bouquet
Zusammensetzung der Duftkomponenten: Vielschichtiges Bouquet: Süße, schwarze Beerenfrucht, Röstnoten und einer blättrigen Komponente.
Reifegrad: Süße Beeren, aber nicht marmeladig oder gar gekocht.
Flaschenreife: Geöffnetes Bouquet. Wird durch Flaschenreife wahrscheinlich noch homogener.
Sauberkeit/Brillanz: Reintönig und frisch.

Ansatz: Süße Frucht
Entwicklung: Säurewirkung nimmt etwas zu. Viel Fruchtfleisch.
Abgang: Langer Abgang, aber etwas zu viel Neues Holz.

Jahrgang/Gesundheit: Gesunde Beeren, weil reintöniges Geschmacksbild.
Jahrgang/Beerenreife: Physiologisch reife Beeren, weil Frucht und Struktur in gutem Verhältnis zueinander stehen.
Jahrgang/Ertrag: Der Ertrag lag vermutlich unter 1 Kilogramm Trauben pro Stock, denn der Rotwein besticht durch einen sehr konzentrierten Fruchtkern.
Stilistik/Keller: Im Neuen Holz ausgebauter Rotwein mit viel Fruchtaroma.
Sorte/Typ (Cabernet Sauvignon): Die schwarzen, süßen Beeren sind typisch für die Cabernet Sauvignon Sorte. Eher untypisch für die Sorte ist das glatte Tannin.
Terroir/Charakter: Das Terroir wird etwas durch das Holz überdeckt. Außergewöhnlicht Fruchttiefe, plastische Aromen.

Erzeugerinfo zum Wein
Grapes: 100% Cabernet Sauvignon (3 different clones).
Vineyard area: In 1986, 4.000 Cabernet Sauvignon vines were grafted onto 22 year old Canaiolo rootstocks at the Villa Cafaggio estate. Further plantings were made in 1991 and 1995. Grapes for Cortaccio are grown in 3 vineyards, making a total of 3 ha on the 40 ha Panzano estate. To achieve the ideal yield of no more than 1kg per individual vine, crop thinning (green harvest) takes place in August.
Harvest: The Cabernet Sauvignon grapes are the last to be picked at Cafaggio, and are left to mature on the vines until the second half (sometimes the end) of October. They are checked daily in order to pick at the absolute peak of maturity.
Vinification: The grapes are de-stemmed and soft crushed, giving best colour extraction and softer tannins. Frequent delestage takes place at the beginning of fermentation. The gentlest of remontage is then carried out for short periods throughout the latter part of fermentation in order to achieve best extraction. Fermentation takes place in temperature controlled conditions in stainless steel for 8-10 days at 30°C for 24-36 hours, then lowered to 26-27°C, giving optimum colour extraction and softer tannins. The juice remains on the skins for 3 weeks. Micro-oxygenation is used at several different stages throughout vinification. Malolactic fermentation is carried out in new French oak barriques.
Ageing: The wine is aged for approximately 18 months in 100% new 2.25l French oak barriques (Allier and Troncais oak made in France), after which it spends at least 6 months in bottle before release.
Alcohol: 14% .
Production: Annual production is limited to 15.000 bottles.
Winemakers notes: Dark purple, almost black in colour. Fabulous aromas of cassis, tar and coffee. The palate is incredibly fat and juicy, with masses of concentrated, voluptuous cassis fruit, huge body, gloriously silky tannins and an immense finish.
